International student, Yazeed Almohaisen from Saudi Arabia, shows Karla how to cook Kabsa.
Ingredients
  • 3 cups Basmati rice
  • 6 pieces of chicken breast
  • 4 tbsp oil
  • 2 large onions
  • 3 large tomatoes
  • 2 tbsp tomato paste
  • 2 chili peppers
  • 2 dried lemons
  • 2 bay leaves
  • 8 cardamon
  • 2 cinnamon sticks
  • 10 pieces of black pepper
  • 1 tbsp salt
  • 2 tsp kabsa spices
Instructions
  1. Brown the onions in oil, medium heat (5-8 mins). Set some aside.
  2. Add chicken to onions, mix for 2-3 mins then add spices.
  3. Watch the video for important information about the dried lemon!
  4. Mix.
  5. Add tomatoes and tomato paste. Mix for 2-3 minutes. Add salt and pepper and mix.
  6. Add water then simmer for about 10 minutes.
  7. Add rice and cook on high heat for 10 minutes (until you see rice close to the surface of the water). Reduce heat and cook for 5 minutes.
